Menu Plan Monday 5/12 - Dairy Free

(UPDATE: I made this last night with venison and it turned out dry and not very flavorful. If you try this and it works out for you, let me know and I'll cook again with ground beef. Thanks!)

    It appears that Campbell's Healthy Request Tomato Soup is dairy free... unless the "flavoring" is derived from dairy. I haven't called the manufacturer about it yet... Thanks for the heads up!

  12. Thanks for the post over at threeagainsttwo@blogspot.com. We, too, are dairy free because of allergies. Not as severe as yours sounds. We had actually kept some milk products in until a month or two ago. We met with a RD and she wanted a complete avoidance to rule out any additional allergies. (My youngest doesn't test allergic, so avoidance is the only way we can confirm the allergy.) It's actually been a good thing that we are being so strict. I can see continual improvements!!   13. dairy free, egg free cake
    known as 4-H cake/depression cake/crazy cake/wacky cake

    1.5 c flour
    3 Tb cocoa powder (optional)
    1 c sugar
    1 tsp baking soda
    1/2 tsp vinegar
    5 Tb oil
    1 tsp vanilla
    1 c water

    oven 350 degrees. combine ingredients and pour into greased 8" or 9" square pan. bake in oven until done, about 35 minutes?

    substitutions:

    vanilla cake: omit cocoa, double vanilla

    spice cake: omit cocoa. add 1 Tb pumpkin spice

    orange cake. omit cocoa & vinegar. use orange juice for the water

    lemon cake: omit cocao. use lemon juice for vinegar. can add some lemon extract.

    and for icing, i have found some pillsbury and betty crocker tubs of icing that just contain soy. hope that helps! these cakes are great, moist, and nobody can tell they are dairy/egg free.
