Food Allergy Moms: HELP!

Nathan turns 4 this Friday! He wants a green cake with green frosting. My standard birthday cake is chocolate... which I can't turn green! Thankfully, I can handle the frosting.

I checked our local grocery store today for boxed mixes, but all the white cakes have milk and/or eggs listed as ingredients. None of the local stores sell Cherrybrook Kitchen mixes.

Do you have a DFEF WHITE cake recipe? I'm usually up for just substituting in a regular recipe, but I've heard that doing that with white cake mixes doesn't make for a good cake.

Maybe I should make a yellow cake and add blue?

Suggestions... PLEASE! :)

They have Cherrybrook cake mixes and ship really quickly.

Food Allergy Mama had a vanilla cake recipe. http://www.foodallergymama.com/2009/02/16/the-perfect-dairy-egg-and-nut-free-vanilla-cupcake-with-vanilla-frosting/ I've never made it because my son is allergic to soy, but I have made a bunch of her other recipes and they are good. Someone in the comments section has the bake time for a cake.

And if all else fails...how 'bout the regular yellow cake and mix in shredded zucchini skins for green flecks thru the cake? Sorry, on my first cup of coffee and that's what popped in my head ;~)

We used this recipe. Can't remember where the post came from though. It is really good. A little more dense than other yellow cakes, but still tasty. I poured mine into a 9 x 13 pan.

Double Layer Birthday Cake
 (M, E, P, S, N)
3 cups cake flour 

1 3/4 cups sugar 

1 1/4 cups water

1/2 cup shortening 

3 T. water, 3 T. oil, 2 tsp. baking powder; mixed together

2 1/2 tsp. baking powder 

1 tsp. salt 

1 1/2 tsp. vanilla extract

Preheat oven to 350 degrees. Grease and flour two cake pans. In a large bowl, combine all ingredients. Using an electric mixer, beat until well mixed, approximately 4 minutes. Pour batter into cake pans. Bake 40 to 45 minutes, or until toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks. Frost when completely cooled.
Note: Baking powder is intentionally listed twice in this recipe. The combination of 3 T. water, 3 T. oil, 2 tsp. baking powder; mixed together is the substitution for 2 eggs.

Here is my go-to cake recipe - I got it off the back of the ENER-G Egg Replacer box:

2 c flour
1 c sugar
3 t b powder
1 t egg replacer
1/4 c applesauce (recipe calls for shortening, but Gabe can't have it)
1-1/3 c water
flavors of your choice (I use vanilla)


Preheat oven to 375. Mix first 4 ingredients together. Add applesauce and mix. Add water and flavor and mix 2 minutes.

Bake 30 minutes.
