Menu Plan Monday April 14


It's been forever since I've posted my meal plan. I do plan weekly, I just haven't posted lately. I've been stuck in a cooking rut and have been doing our good ol' standbys. I've got some new ones this week and some tried-n-true.

Roasted Chicken Legs *new
(dairy free using Fleischman's unsalted)
Dairy-free mashed potatoes
corn on the cob

Awesome Baked Pork Chops *new
(dairy free with homemade breadcrumbs, my cream of mushroom soup, and soy milk)
Fried Rice *new
Orange-Honey Glazed Carrots *new
crescent rolls

Alabama Pulled Pork
on a baked potato with dairy free margarine and DF sour cream (oh, I miss the cheese...)
Jeff's white sauce (a mixture of salad dressing, vinegar, salt, pepper)

Leftover meats
Pinto beans
Back Eyed Peas
Dairy free corn bread
green onions
pears

Spaghetti
Garlic bread
green beans

Mmmm...it all sounds good!

I have a son who is allergic to dairy AND soy so it is tough finding recipes that will please me and my hubby's palates and be safe for our lil guy. We usually end up making him something different than us or he east parts of our meals and fills up on fresh veggies or fruit. He really is limited.

Like Niki, TheYoungest is allergic to dairy and soy.

As an aside, we're in a study for food allergies. They are going to do a RAST test and a skin prick test on all 5 of us. The skin prick will test for a lot more than the Top 8. We're going in May. I'm sure I'll blog about it.
